Castelnaudary




Main city of the region of Lauragais, Castelnaudary is a municipality of 12 000 inhabitants which offers multiple wealth.


This spot was for a long time known as the main city of windmills, it owns 32 on the whole among which Cugarel mill from the 17th century. The construction of the Canal du Midi (1666-1681), encouraging the transit of cereals, allowed an important economic growth for the city.


Its classement in the inventory of the Patrimony of the Humanity from UNESCO strengthens its reputation.

But this marvellous town of the Southwest owes all its fame to its famous cassoulet.

Today even, this dish is cooked with the biggest respect of the tradition with products of the soil Lauragais. The cassoulet has found a place in history for the local economic development. There is even an universal Academy of Cassoulet, whose purpose is to gather worldwide the head chefs and people who prepare and who like the cassoulet.

Numerous sites are also to discover :

- The Collective Saint Michel of the 13th century.
- The baroque Chapel of Notre-Dame-de-Pitié
- The Gothic vestiges of the Saint-Louis square...
